The wines of Domaine de Matourne
Domaine de Matourne producesCôtes de Provence AOC wines only and is located 4 km north of Flayosc (Var) and 9 km west of Draguignan. It was developed by Jurgen Spaethe since 1973. Planting of vines started in 1974, with the latest plantings realized in 2000. The varieties comprise Cabernet Sauvignon, Syrah, Grenache, Mourvèdre for the Reds, Rolle (Vermentino Bianco) and Sémillon for the Whites, whereas the Rosé wine is made with Grenache, Mourvèdre and Cinsault. The Reds dominate with around 70% of total production, followed by the Rosé (20%) and the White (10%). The Domaine is at an altitude of 500 m, located in the Var hinterland, with a deep clay, argile and silicon soil, allowing a slow ripening and picking of the grapes late in the season with warm days and cool nights. Weeds are removed mechanically and the vines are not fertilized, resulting in low productivity.
The winery, built in 1981, allows for a modern vinification: introduction of the hand picked grapes in 40 kg containers by gravity into the fermentation tanks, slow maceration and fermentation in stainless steel. In addition to its fruity and elegant Rosés and Whites, Matourne has made its reputation with its powerful Reds that age well during 5 to 10 years. The Reds of the Cuvées, dominated by either Cabernet Sauvignon or Syrah, are aged in French oak barrels for 9 to 12 months, whereas the generic Reds (usually an assembly of Grenache, Mourvèdre and Cabernet Sauvignon) are either aged in stainless steel only or for 6 months in barrels. The Whites and Rosés are stored only in stainless steel, to preserve aroma and freshness.
